When Two Brilliant Chefs (Who Actually Like Each Other) Cook Together

There’s something about Atul Kochhar that just feels… special. Not in a loud, look-at-me way, but in that quietly confident, knows-exactly-what-he’s-doing kind of way. The kind of chef who doesn’t just cook food, but completely reshapes how we think about it.

So when we heard he was teaming up with Stuart Gillies for a two-part collaboration at Number Eight, we immediately thought one thing: this is going to sell out.

And it probably will.

Following a run of fully booked guest chef dinners (no surprise there), Number Eight has announced its 2026 series, and this particular collaboration feels like the one everyone will be talking about. Not just because of the names involved, but because there’s a genuine story behind it. These are two chefs who have known each other for years, who have grown through the industry in their own ways, and who now get to come together and just… cook.

The collaboration unfolds across two evenings, which makes it even more fun. First, on 21 October, Stuart heads over to Atul’s restaurant in Tunbridge Wells for an intimate dinner at Essence at The Pantiles. Then, on 4 November, Atul returns the favour, stepping into the kitchen at Number Eight in Sevenoaks.

It’s giving dinner party energy, but make it Michelin-level.

What we love most is the format. Six courses, split evenly between them. Three dishes from Atul, three from Stuart. No overcomplicating, no trying to outdo each other, just a really thoughtful, beautifully balanced menu that lets both of their styles shine.

Atul, of course, is known for taking Indian flavours and giving them this elegant, modern twist that feels completely at home in the UK. Stuart, on the other hand, brings that deep-rooted experience from Michelin kitchens around the world, with a real love for British ingredients. Together, it’s less about “fusion” and more about a conversation on a plate.

And honestly, those are always the best kind of meals.

Number Eight itself feels like the perfect setting for something like this. It’s quietly built a reputation for doing things properly, focusing on incredible local produce from Kent and letting it speak for itself. There’s no fuss, no gimmicks, just really, really good food in a space that feels considered and warm.

Which is probably why these events keep selling out.

With tickets being released via Seven Rooms (and early access for Members Club), this is very much one of those “don’t think about it too long” situations. Because when chefs like this come together, it’s not just another dinner.

It’s the kind you remember.
